Non-stick Cooking Spray

2 lb Skinless, boneless chicken thighs, cut into 1" pieces

6 cups Chopped Carrots

4 cups Coarsely Chopped Onions

12 cloves Minced Garlic
-
2 Tbsp Grated Fresh Ginger
-
(2) 14½ oz cans Reduced-sodium Chicken Broth
-
2 cups Light Coconut Milk
-
2 Tbsp Curry Powder
-
1 tsp Salt
-
½ cup Snippets of Fresh Cilantro
-
2 Tbsp Lime Juice
COCONUT CHICKEN CURRY STEW
Directions:

Coat a medium non-stick skillet with cooking spray. Heat over a medium high heat. Add chicken, cook and stir about 3 minutes or until it’s light brown. Drain off fat.

In a 3 1/2- or 4-quart slow cooker: Layer the carrots, chicken, onions, garlic, and ginger.

In a medium bowl whisk together: Broth, coconut milk, curry powder, and salt. Pour over the entire mixture in cooker.

Cover and cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.

To serve - stir in the cilantro and lime juice.

WATERMELON SORBET

Ingredients:

1¼ cups sugar
-
1¼ cups water
-
6-7 cups fresh seedless watermelon chunks (about half a watermelon)

3 tbsp. fresh lime juice (approximately 3½ medium-sized limes)
Directions:

In a medium saucepan, bring the sugar and water to a boil over medium-high heat. Reduce the heat to medium and simmer until the sugar is completely dissolved. Turn off the heat and let it cool down.

Put the watermelon chunks and lime- juice in a blender. Process the mixture until the watermelon is completely pureed. Using a fine mesh strainer or sieve, pour and press the blended mixture through it to remove the seeds and any extra pulp.

Combine with the cooled simple syrup and refrigerate for 1 hour.

Pour the watermelon mixture into the freezer bowl of your ice cream maker. Mix until the sorbet has thickened, approximately 25-35 minutes. The sorbet will have a soft serve texture. You can enjoy it right away or put the sorbet into an airtight container and place in the freezer until firm, about 2 hours.
