Lemon Pepper Chicken Kabobs
It’s grilling season, which means many opportunities to whip up a batch of everyone’s favorite, lemon pepper chicken - kabob style. Marinate boneless, skinless chicken breast cubes in a tasty mixture of olive oil, vinegar and lemon pepper seasoning then serve on a skewer with seasoned asparagus and chunky cut potatoes. Grill over medium-high heat and turn occasionally until the chicken is cooked through.
This meal will taste like summer on a stick.
Skinny Greek Chicken Kabobs
Start by building the marinade. You’ll need extra virgin olive oil, white wine vinegar, garlic powder, salt, onion powder, Dijon mustard, black pepper, oregano and basil. Once you marinate boneless, skinless chicken breast cubes in this delicious mixture, take a skewer and slide the chicken, zucchini slices, squash slices, red onion and cherry tomatoes and cook on medium high until the chicken is cooked. Serve with a cup of tzatziki, cucumber yogurt or feta dip so you and your guests can either dunk or drizzle sauce all over your tasty creation.
